I love baking Christmas cookies for Ross and other family members during this time of year, but I always feel like I'm leaving Coco and Chanel out of the fun! After Coco's Birthday Biscuits were such a success, I have tweaked the recipe with a seasonal spin. Next time you're making cookie dough, whip up a batch of Christmas Doggy Cookies for your favorite four-legged friend! When wrapped up right, these make unique hostess gifts for friends and family with a dog. I made a triple batch for my pups, my parents and my in-laws. They are a hit all around. Shout out to my mom for helping mix all of that dough, what a work out!
Coco & Chanel's Christmas (Dog) Cookies
Prep Time: 15 MinutesCook Time: 20-25 Minutes
- 1 cup sweet potato, cooked & mashed (1 medium sized potato should do, this is a great used for leftover sweet potato mash from the holidays)
- 1/2 cup apple, peeled & chopped
- 1/4 cup unsweetened applesauce (substitute this for any leftover Pressure Cooker Cranberry Sauce after thanksgiving)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 eggs
- 2 1/2 cups whole wheat flour, more for cutting board
Step 1:
Preheat the oven to 350℉ ( I use convection so that the biscuits cook evenly). Line a baking sheet with a silicone baking pad or grease.

Bring small pot of water to a boil. Peel one medium sized sweet potato, cut into 1/2" cubes. Place sweet potato cubes into water and let simmer for several minutes, until boil (about 10 minutes).

While sweet potato is cooking, mix eggs, flour and applesauce to form a stiff dough. If you have a Kitchenaid mixer with a dough hook, this step is quick and easy. Otherwise, I suggest beating the eggs and kneading the dough together by hand for an even blend.

Drain potatoes and mash. Measure 1 cup and mix with applesauce dough from step 3. Refrigerate any remaining sweet potato for another use or a second batch (you can freeze leftover sweet potato for a future batch!). Stir in chopped apple pieces. Dough will be sticky.

Transfer dough mixture to a lightly floured cutting board. Roll dough into 1/2" thick sheet. Cut into small squares with pizza cutter or use cookie cutter for larger biscuits. Place onto prepared baking tray.
I cut my dough into 1" x 1" squares, a little less than 1/2" thick (as thin as the apple pieces would allow) - this yielded about 100 biscuits.

Step 6:
Bake in oven for 20-25 minutes, until edges are golden brown. Baking time will vary based on thickness and size of biscuits. Let cool and serve to your favorite four-legged friends! Store in a cool, dry place.
