Ross and I love a good brunch! Nothing like a great cut of steak, a hearty egg (or three) and a bloody mary to kickstart a productive Sunday.
Since we are getting out of town next weekend, we decided to kick off our Valentine's celebrations this weekend. On our trip to San Francisco we had an awesome steak and eggs with salsa verde that Ross just can't stop daydreaming about. I had trouble finding a recipe and honestly, didn't want to spend my weekend fire roasting tomatillos over our gas range. My googling did provide me with an awesome recipe from The Every Girl for Steak and Eggs with Fresh Chimichurri.
My trip to the grocery store to stock up on ingredients cost about $20. This included potatoes, a package of steaks, herbs and limes. I opted for thin sliced Top Round. This was on sale for 3.99 per pound and came in a pack of 8, enough to freeze and have again. The same goes for the herbs. I plan to make extra chimichurri to freeze for later. Ultimately, each meal comes out to only $2.50, a real bargain compared to actual brunch prices.
No brunch is complete without a hearty cocktail, so I made my signature Bacon Jalapeno Bloody Marys. The salty bacon and spicy pepper are simple, tasty additions to an easy drink. This is a great recipe for anyone nursing a hangover at home on this Superbowl Monday.
Abby's Bacon Jalapeno Bloody Mary
Prep Time , serves 1.
Ingredients
- 1 Slice Jalapeno Pepper
- 1 Slice Lime
- 1 Slice Turkey Bacon
- 12 oz. Tomato Juice
- 1 oz. Vodka or Tequila
- 3-44 Dashes Hot Sauce
- 1 Dash Worcestershire Sauce
- 1 Pinch Salt and Pepper
Instructions
- Cook turkey bacon according to directions on package. Set aside.
- Muddle one jalapeno slice at the bottom of each glass.
- Squeeze one slice of lime into each glass.
- Pour about 12 oz. tomato juice into each glass. Top with 1 shot of liquor of your choice (we prefer silver tequila).
- Add 1 dash of Worcestershire Sauce and 3-4 dashes of hot sauce (adjust according to your tastes).
- Stir or shake ingredients together. Top with a shake of salt and pepper. Garnish with slice of bacon.
