Summer is (almost) here but the weather is finally into summer swing. After weeks of gloomy, bitter, rainy weekends, the sun is shining and the thermometer has broken 80, almost 90 degrees. 90 degree temps are in the forecast for the next several days and I need a way to beat the heat, on a budget and without totally blowing my diet out of the water.

I am a sucker for a great frozen drink, but they are loaded with sugar and empty calories. A few years back, Starbucks had a Coconut Mocha Frappuccino on their menu that was a tasty splurge, reminiscent of a Mounds candy bar. Too bad for the me of then, it was discontinued, but for us now, it is my inspiration for my latest Starbuck's dairy free Coconut Mocha Frappuccino Faux-caccino. Not only is this recipe friendly to my lactose and gluten intolerant friends, but it also blends only 1/3 the calories and less than 1/4 of the sugar of a grande frap at your local Starbucks. Save yourself the trip, over 90% of the money and the empty calories and try a Coconut Mocha Faux-caccino.
