Over the last two years since Ross and I moved into our own house, my slow cooker has become my trusty side piece. I don't see him often, but when I do, its a whirlwind romance. We spend a few hot minutes together prepping a meal in the morning, then I head out for the day and he gets all hot and bothered. When I come home from work or travel in the evening, he's got something hot and ready to serve up for me. I love to bring him out and show him off at parties too. I mean "I love to waste a good party in the kitchen," said no one ever. My slow cooker has been the centerpiece of many a taco bar or chili cook off, and again, he will be making an appearance for Memorial Day. So lets get (slow) cookin' and try out my 5 Ingredient Slow Cooker Pulled Pork.
5 Ingredient Slow Cooker Pulled Pork

Ingredients
- 4 lbs. Pork Loin, budget about 1/2 lb. per guest when scaling up this recipe
- 1 medium onion
- 12 oz. beer
- Barbecue Sauce
- 8 Kaiser Rolls
Instructions
- Trim ends off onion and peel.
- Place whole onion, pork and beer of your choice into slow cooker.
Note: I like using a fuller bodied lager like Sam Adams or Yuenling for my pulled pork, it provides more flavor to the meat. If you are not a big beer person, try something lighter. - Cover slow cooker and cook on low for 8 hours, until meat is fork tender.
- Discard onion and liquid. Shred pork using two forks. Mix in barbecue sauce of your liking (or serve on the side if you prefer naked pork). If you have time to DIY, this is my favorite.
- Build sandwiches using kaiser rolls. Top with 20 Calorie Spinach Coleslaw, baked beans, cheese, more barbecue sauce and enjoy! Use the warming feature on your slow cooker to keep your pork hot for anyone wanting to enjoy seconds!

For a half-homemade hack, combine 1 can of your favorite baked beans with 1 can of drained and rinsed pinto beans in a small slow cooker (this cuts down the sugar and calories in each spoonful too). Turn on to low for 2+ hours until beans are warmed through. If you are in a hurry, microwave them and keep warm in slow cooker through party time.
