Apple Pie Chai Chia Pudding

I love a slice of apple pie, but there's something about it that always made my mom say "no" when I reached for it at breakfast. I always had a convincing counterargument..."but mom, its apples. apples are healthy." She always won. Here I am at 29 still trying to have apple pie at 8 AM. This recipe has become my favorite chia pudding by far. It's like warm apple pie without the guilt. It is easy to make ahead of time, store in the fridge and reheat the apples as necessary. This makes a delicious breakfast or afternoon snack to hold you over until dinner. If you're one for texture (to reminisce about pie crust), try sprinkling some unsweetened toasted nuts on top.





Apple Pie Chai Chia Pudding

Prep Time , serves 2.

Ingredients

  • 1/4 Cup Chia Seed
  • 1 Cup Unsweetened Almond Milk
  • 1/4 Cup Celestial Seasonings Mountain Chai Tea Latte Concentrate
  • 2 Medium Apples, diced
  • 1 Tsp Lemon Juice
  • 2 Tbsp Water
  • Sprinkle Ground Cinnamon
  • 1 TSP Butter, optional

    Instructions

    1. Combine chia seeds, almond milk, cinnamon and chai tea concentrate. Mix ingredients well with fork or whisk, breaking up clumps of seeds. Seal well with lid.
    2. Refrigerate pudding mixture for several hours or overnight, shaking once or twice to break up any clumps that may have formed.
    3. Heat a medium skillet over low heat. If using butter, melt and add cinnamon. Add lemon juice, water and apple pieces. Cover and cook until apple is soft, about 10 minutes. Add more water if liquid dries out.
    4. When ready to serve, separate pudding into 2 servings. Top with warm apples.
